Russian Soup with Meatballs
I found out today that I do not have any good piece of meat or chicken to make a soup. So I recalled a very helpful recipe. This is the soup with meatballs - very easy and quickly to cook. Besides, it is really tasty, especially for children, which sometimes do not like to eat soups at all.
Another advantage of this soup is that you do not need to cook the broth first, so you skip through several quite boring steps.
Actually all you need to do is to boil water and cook all your favorite vegetables. You definitely need such basic ones like potatoes and carrots, but I also add all that I have in stock – tomatoes, squash or pumpkin, sweet pepper etc. I also love to add some aromatic herbs, celery and bay leaves.
At the very last moment you add some small meatballs made from mince with onion and salt. It takes just several minutes for meatballs to get ready in a simmering soup.
If the mince was not fatty, then the soup will also be very light – with a lot of vegetables. Just try it one day when you need to feed several persons including kids and when you have a lack of time. Hope you will find this option helpful!
